As Bhutan does not have any access to the ocean or sea, fish dishes have been prepared using dried fish imported either from India in the past or from Thailand these days. The types of fish on the market vary from time to time, but we found a fish that tastes similarly to the dried fish eaten in Bhutan and that is Komai (saffron cod). Komai can be caught under the ice in the sea near Hokkaido island. The combination of the high quality Komai dried only with salt and the flavor of dried chili peppers from Bhutan makes the dish unbelievably delicious.
